Here’s a tasty recipe to make if you have a vegetable garden with tomatoes and zucchini. This recipe calls for 1 cup of shredded cheese… you can really use any kind of cheese.. mozzarella, swiss, cheddar! Enjoy!
Zucchini Tomato Casserole
Ingredients
- 2 medium zucchini
- 3 medium tomatoes
- 1 medium onion
- 1 cup shredded cheese
- olive oil
- salt and pepper to taste
Instructions

Thinly slice zucchini, tomatoes and onions. Dizzle oil in casserole dish. Layer one half of the zucchini, tomato and onion in dish. Sprinkle with 1/2 of the shredded cheese. Layer the rest of the vegetables and then top remaining cheese. Bake in 350 oven for 30 mins. or until veggies are tender.
