Zucchini Pancakes Recipe

This recipe is not like a breakfast pancake, its more like a potato pancake that you can have with dinner.  Now is the time when home gardeners are starting to have an abundance of zucchini coming in.  This is another recipe to become part of your zucchini arsenal!  Enjoy!

Zucchini Pancakes

Ingredients
  • 2 cups grated zucchini
  • 1/4 cup onion, chopped
  • 1 egg
  • 1/2 cup flour
  • 1 teasp baking powder
  • 1 pinch salt
  • 1/8 teasp pepper
  • olive oil or butter for skillet
  • Parmesan cheese for serving
Instructions
  1. Combine zucchini, onion, egg, salt and pepper. Combine flour and baking powder, then mix into zucchini mixture.

  2. In skillet, heat oil or butter and drop about 1/4 cup "pancakes". Cook until browned on both sides. Serve with parmesan cheese.
