- 2 tbs olive oil
- 3 cups leeks, washed and chopped (white and green part included)
- 1/2 cup onion, chopped
- 6 cups cubed potatoes
- 1 carrot, diced or shredded
- 1 celery stalk, sliced
- 7 cups vegetable broth or water
- salt and pepper to taste
- 1 cup milk (regular or soy)

Heat oil in pot, add leeks and onions. Cook until softened, about 5 mins.

Add potatoes, carrot, celery and broth. Bring to boil then reduce heat and let simmer for 45 mins.

Taste for salt and pepper. Let soup cool slightly and add milk.

Optional: puree soup or a portion of the soup in blender or food processor.
