Summer Pasta Salad Recipe | Light & Refreshing!

I’m always looking for new pasta salads to try. This one is light and refreshing and you don’t have to worry about mayo spoiling in the hot weather with this salad. Enjoy!

Summer Pasta Salad

Ingredients
  • 8 oz pasta such as rotini, farfelle or shells
  • 1/3 cup olive oil
  • 2 tbsp red wine vinegar
  • 1/4 cup fresh, minced parsley
  • 1 small onion, chopped
  • 1 large cucumber, diced
  • 2 large tomatoes, cubed
  • salt and pepper to taste
Instructions
  1. Cook pasta according to package directions. Drain and let cool slightly. Add rest of ingredients and toss well.
