- 12 oz linguine or similar pasta
- 6 oz snow peas, strings removed and cut into 3rds.
- 8 oz fresh brocoli, coarsely chopped
- 1/4 cup creamy peanut butter
- 3 tbsp rice vinegar
- 3 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tbsp fresh ginger, minced
- 1 tbsp sesame oil
- 1/4 tsp cayenne pepper
- 1 garlic clove, minced
- 1 large red bell pepper, sliced thin
- 12 oz. boneless, roasted chicken cut into pieces
- sesame seeds for garnish (optional)

Cook pasta as directed but in last minute of cooking time add snow peas and broccoli. Drain pasta and vegetables and rinse under cold water to cool.

In small bowl combine peanut butter, rice vinegar, soy sauce, sugar, ginger, sesame oil, cayenne, garlic and 3/4 cup of hot water. Mix until well blended.

In large bowl toss pasta, snow peas, broccoli, red bell pepper and chicken with sauce. Sprinkle with sesame seeds.
