This recipe is great for leftover ham. The ham gives the potatoes a savory flavor. With a scrumptious side salad or vegetables this dish becomes a full meal. Leftovers taste great the next day too! Enjoy!

- 2 1/2 - 3 lbs potatoes, thinly sliced (peeling the potatoes is optional)
- 2 tbsp butter
- 1 onion, chopped
- 2 cups ham, chopped
- 2 cups cheddar cheese, grated
- 1 1/2 cups milk or half and half
- 1 tsp dry mustard
- 1 tsp paprika
- salt and pepper to taste

Heat butter in small skillet and lightly brown onion.

In ungreased 9x11 baking pan, put a single layer of sliced potatoes. Top with some of the browned onion, then add a layer of ham, then cheese. Continue layering potatoes, onion, ham and cheese until all is gone and you have a layer of cheese on top.

In saucepan, heat milk with spices until hot. Pour over potatoes.

Bake, uncovered, in 400° oven for about 45 mins or until potatoes and most of the milk is absorbed.
