Rhubarb is one of those foods that you either love or hate. It does have a unique flavor but it is also healthy as its rich in antioxidants. If you’ve never given rhubarb a try, you should… here’s a recipe to start you off 🙂 Enjoy!
Rhubarb Crunch

Ingredients
- 1 cup rolled oats
- 1 cup flour
- 1 cup brown sugar
- 1/4 cup chopped nuts
- 1/2 cup butter or margarine
- 3 cups sliced rhubarb
- 1/2 cup granulated sugar
- 1 tsp cinnamon
- 1 tbsp water
Instructions

Mix oats, flour and brown sugar. Add nuts then cut in butter or margarine until crumbly. Place half of mixture into a greased 8x8 inch pan. Cover with Rhubarb mixed with other remaining ingredients. Top with other half of oat mixture. Bake 45 mins in 350° oven. Serve warm or room temp. Great with vanilla ice cream.
