Quick & Easy Seafood Bisque Recipe

This is a very easy recipe to prepare which will impress your family! Very nice around the holidays. You can use a blend of seafood or stick with just one type. Enjoy!

Quick Seafood Bisque

Ingredients
  • 1 1/2 quarts water
  • 4 medium potatoes, peeled and cut into chunks
  • 2 medium onions, chopped
  • 1 bay leaf
  • 1 garlic clove, minced
  • 1 cup chopped scallops, shrimp, lobster or crabmeat
  • 2 egg yolks
  • 1/2 cup heavy cream
  • smoked or regular paprika
  • salt and pepper to taste
Instructions
  1. Bring water to boil. Add potatoes, onions, bayleaf, garlic, salt and pepper. Simmer until vegetables are tender, about 15 mins. Add seafood and simmer until cooked, about 5 mins. Remove bayleaf. Bring soup to a boil, then turn off heat and stir in egg yolks blended with the heavy cream. Stir well and serve. Garnish with paprika.
