Marinated Cucumber Salad
Ingredients
- 1/2 cup red wine vinegar
- 1 tbsp soy sauce
- 1 tbsp olive oil
- 2 cucumbers, sliced (peeling is optional)
- 2 scallions, coarsely chopped
- salt and pepper to taste
Instructions

Combine vinegar, soy sauce and oil in bowl. Add in scallions and cucumbers; toss to coat. Cover and refrigerate for several hours or overnight. Serve chilled.
