Ingredients
- 1 eggplant (medium or large)
- olive oil
- 1 large onion, chopped
- 4 garlic cloves, chopped
- 1 large tomato, chopped
- 8 oz can tomato sauce
- salt and pepper to taste
- 16 oz pasta, cooked according to package directions
- grated parmesan cheese
- chopped parsley or basil as garnish
Instructions

Cube eggplant (peel if desired) and place in steamer pot, steam until tender (about 5-10 mins).

Saute onion in olive oil until soft. Add garlic, cook one additional minute. Add eggplant, chopped tomatoes and tomato sauce. Stir and cook for 3 minutes. Serve over cooked pasta. Serve with Parmesan cheese and garnish with chopped parsley or basil.
