Eggplant Pasta Sauce Recipe

 

Anything with eggplant piques my interest.  This sauce can be over pasta or put in a wrap.  If you like eggplant, you’ll like this sauce!  Enjoy!

Ingredients
  • 1 eggplant (medium or large)
  • olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, chopped
  • 1 large tomato, chopped
  • 8 oz can tomato sauce
  • salt and pepper to taste
  • 16 oz pasta, cooked according to package directions
  • grated parmesan cheese
  • chopped parsley or basil as garnish
Instructions
  1. Cube eggplant (peel if desired) and place in steamer pot, steam until tender (about 5-10 mins).

  2. Saute onion in olive oil until soft. Add garlic, cook one additional minute. Add eggplant, chopped tomatoes and tomato sauce. Stir and cook for 3 minutes. Serve over cooked pasta. Serve with Parmesan cheese and garnish with chopped parsley or basil.
