A few years back, we posted a recipe for Baba Ganoush, which is similar since it also has eggplant as an ingredient. But what is easy about this recipe, is that its made in a crock pot! - 1 eggplant, about 1 1/2 - 2 lbs, peeled
- 1/2 cup chopped fresh tomatoes
- 1/4 cup plain Greek yogurt
- 2 tbsp chopped onion
- 2-3 garlic cloves, minced
- 2 tbsp olive oil
- 1/2 tsp dried oregano
- 1-2 tbsp fresh lemon juice
- salt and pepper to taste

Pierce peeled eggplant and place in crock pot. Cook until tender, about 4 hours. Mash eggplant and then mix with remaining ingredients. Season to taste with lemon juice, salt and pepper. Serve with pita bread, vegetables or chips.
