- 1 lb chicken breast - cubed
- 14 oz can diced tomatoes
- 2 cups chicken broth
- 1 large onion, chopped
- 1 red or green bell pepper, chopped
- 2 garlic cloves, minced
- 1/2 tsp thyme leave
- 8 oz. okra, fresh or frozen
- salt and pepper to taste

Combine all ingredients except okra, salt and pepper in crock pot. Cook on low for 7-8 hours. Add okra during the last hour of cooking. Season with salt, pepper and hot sauce if desired. Serve with rice.
