Easy Chicken Gumbo Recipe | Crock Pot Recipe

Here’s a real simple crock pot recipe. Most of the ingredients go right into the crock pot. You could some rice separately and add okra for the last 30 minutes of cooking time. Okra has a very unique flavor and texture. If you don’t care for the texture, mince the okra and then add it to the gumbo. You’ll get the flavor which makes the gumbo delicious. You can add some cayenne pepper to the gumbo to spice it up or serve with a bottle of hot sauce! Enjoy!

Easy Chicken Gumbo

Ingredients
  • 1 lb chicken breast - cubed
  • 14 oz can diced tomatoes
  • 2 cups chicken broth
  • 1 large onion, chopped
  • 1 red or green bell pepper, chopped
  • 2 garlic cloves, minced
  • 1/2 tsp thyme leave
  • 8 oz. okra, fresh or frozen
  • salt and pepper to taste
Instructions
  1. Combine all ingredients except okra, salt and pepper in crock pot. Cook on low for 7-8 hours. Add okra during the last hour of cooking. Season with salt, pepper and hot sauce if desired. Serve with rice.
