Cold Tomato Soup
Ingredients
- 3 lbs tomatoes, seeded and chopped
- 1 garlic clove, crushed
- 2 tbsp olive oil
- 2 teasp balsamic vinegar
- 1 teasp lime zest
- 2 tbsp fresh basil leaves, chopped
- salt and pepper to taste
Instructions

Puree tomatoes until slightly chunky. Add in garlic, vinegar, lime peel and olive oil. Mix well. Refridgerate soup for at least 1 hour. Serve with fresh basil sprinkled on top.
