Cold Tomato Soup Recipe

Here’s a tasty soup for the warmer weather.  And its a delicious way to use garden tomatoes.  Enjoy!

Cold Tomato Soup

Ingredients
  • 3 lbs tomatoes, seeded and chopped
  • 1 garlic clove, crushed
  • 2 tbsp olive oil
  • 2 teasp balsamic vinegar
  • 1 teasp lime zest
  • 2 tbsp fresh basil leaves, chopped
  • salt and pepper to taste
Instructions
  1. Puree tomatoes until slightly chunky. Add in garlic, vinegar, lime peel and olive oil. Mix well. Refridgerate soup for at least 1 hour. Serve with fresh basil sprinkled on top.
