Black Bean Salad
Ingredients
- 1 15 oz. can of black beans
- 1 cucumber, peeled and diced
- 3/4 cup red pepper, chopped
- 1 tomato, diced
- 1 cup corn - frozen or fresh (optional)
- 1/4 cup red onion, diced
- 1 small fresh jalapeño pepper, minced
Instructions

Combine beans, cucumber, pepper, onion, tomato, corn and jalapeno pepper in large bowl. Mix dressing ingredients together and pour over beans.
