Way back in 2014 (wow, time flies!), we posted a recipe for Lemony Artichokes. That is a tasty recipe that is made in the microwave. Check it out if you like artichokes. But today, we have another recipe. This one is for baked artichokes, with lots of flavor!
Artichokes may not be for everyone, but if you like artichokes, you will want to give this easy, flavor-packed recipe a try!
- 4 artichokes
- 1/2 small onion, chopped
- 1 garlic clove, minced
- 1 tbsp chopped parsley
- 2 tbsp grated Romano or Parmesan cheese
- 1 cup breadcrumbs (fresh)
- 1/4 cup olive oil
- 2 tbsp water

Cut off stalks and tips of artichokes. Remove some tough outer leaves and spread remaining leaves open. Mix onion, garlic, parsley, cheese, breadcrumbs. salt and pepper to taste. Moisten with olive oil and water. Fill each leave with tiny bit of mixture. Fill the center of the artichoke with mixture also.

Place artichokes in baking dish. Sprinkle with olive oil and add a little water to the bottom of the dish. Bake at 325° for 45 mins or until bottom of artichokes are soft.
