Chicken Caprese Pesto Pasta
We used 2 boxes of the Suddenly Salad and ate it as our meal tonight for dinner (feed 5 with leftovers) along with some homemade bread. It was delicious and everyone loved it.

Chicken Caprese Pesto Pasta Recipe
Ingredients
2 boxes Betty Crocker Suddenly Salad (classic, caesar, or basil-pesto- does not matter)
2 lbs thin sliced chicken breast
1 lb (16 oz) mozzarella cheese
1/2 pint grape or cherry tomatoes
1 tbsp chopped basil (fresh)
cold water and olive oil (according to box instructions)
4 oz (half container) basil-pesto sauce
Directions
Grill or broil chicken- while cooking begin other preparations. Once cooked let cool.
Boil water and cook 2 boxes Suddenly Salad Pasta according to box instructions. When finished drain and rinse with cold water. Let cool.
Cut mozzarella into small bite-size pieces. If you are using small fresh mozzarella balls you do not need to cut.
Cut grape/cherry tomatoes in half.
In a large bowl mix together mozzarella, tomatoes, and chopped basil.
In a seperate small bowl prepare Suddenly Salad seasoning packets according to instructions on box. Add to cheese and tomato mixture.
As soon as the chicken is at room temperature (so you do not melt the cheese) cut into small pieces and add to mixture.
Add pesto-basil sauce and stir well.
Refrigerate at least 1 hour and serve cold.
