Beets are tasty and a healthy food to eat. They can be a bit messy to prepare, but well worth it! This recipe is actually made in a crock pot. Enjoy!
Dijon Beets
Ingredients
- 1 lb. beets, peeled and sliced
- 1/4 cup chopped onion
- 2 garlic cloves, chopped
- 1/2 cup sour cream
- 1 tbsp cornstarch
- 2 tbsp dijon mustard
- 2 tsp lemon or lime juice
- salt and pepper to taste
Instructions

Combine beets, onion, garlic and sour cream in crock pot. Cover and cook on high for 2-3 hrs until beets are tender. Stir in combined cornstarch, mustard and lemon or lime juice. Stir for 2-3 minutes until blended and slightly thickened.
