Vegetali al Forno Recipe | Use your Garden Vegetables in this Casserole

Vegetali al Forno… what is that, you may ask…  Its basically a vegetable casserole, that happens to be delicious.  Serve as a meatless, vegetarian meal or as a side dish.  Its great for this time of year, especially if you are vegetable gardener.  I took a look at my vegetable garden today and realized I needed to get going on using up some of the zucchini I am growing. 😉 This recipe works for that, plus if you are growing tomatoes and eggplant too.  Enjoy!

Ingredients
  • 1 eggplant, peeled and cut into 1/2" slices
  • 2 large onions, sliced
  • 2 medium zucchini, sliced in 1/4 inch slices
  • 4 large fresh tomatoes, sliced
  • 1/4 cup olive oil
  • 3/4 lb sliced mozzarella
  • 1/4 cup chopped fresh basil
Instructions
  1. Drizzle oilve oil on bottom of baking dish. Put in a layer of eggplant, layer of onion, zucchini, tomatoes and then layer of cheese. Repeat until all ingredients are used. Pour remainder of olive oil on top, sprinkle with salt and pepper. Bake for 35-45 mins at 350° until vegetables are tender.
