Fresh Tomato and Basil Cream Sauce Recipe
Do you have a vegetable or herb garden this summer? I looked outside this morning and my basil had a sudden growth spurt! I have to do something with it. I always freeze some to use in the winter for when I make homemade tomato sauce. Then I took a look at my tomato plants this morning.. they have had the same growth spurt! I’m going to make this pasta sauce recipe tonight.
Today’s recipe is simple to make. The sauce is delicious by itself but you can easily add chicken, shrimp or other vegetables.
Fresh Tomato and Basil Cream Sauce Recipe
Ingredients:
- 1 lb. pasta – any type works
- 15 oz container Ricotta
- 1 lb. fresh tomatoes, chopped
- 10 fresh basil leaves chopped or 1 tablespoon dried basil
- Parmesan cheese to taste
- salt and pepper to taste
Directions:
1. Cook pasta according to package directions. Reserve some of the cooking water and drain pasta.
2. Add ricotta and tomatoes to pasta pot. Heat until warm. Add a few tablespoons of reserved pasta water if mixture is too thick. Remove from heat and stir in basil leaves. Combine pasta and sauce then serve immediately. Top with grated cheese.
