Italian Potato Salad Recipe
Want a break from the standard mayonnaise-based potato salad? Then give this recipe a try. You don’t have to worry about this potato salad sitting out like you do with regular potato salad since this recipe has olive oil and red wine vinegar as its dressing. This recipe is simple to make, yet it’s quite tasty! I like to use red onion to give the salad a little extra color. My recommendation is to also use flat leaf parsley, rather than the curly. As far as the olive oil, use whatever is your favorite type whether its regular, virgin, extra virgin.

- 2 – 3 lbs. medium sized potatoes cooked and peeled
- 1 small onion finely chopped
- 1/4 cup chopped parsley flat parsley is preferred
- 1/4 cup olive oil
- 1/3 – 1/2 cups red wine vinegar
- salt and pepper to taste

Slice prepared potatoes into 1/2 inch slices.

Combine remaining ingredients and pour over potatoes.

Toss well. Add more oil or vinegar to taste along with salt and pepper.
