Roasted Asparagus Recipe
Its about that time of year where we are seeing fresh asparagus in the stores. I never was a huge fan until a few years ago. They are tasty and healthy… full of vitamins and minerals.
We have posted a few recipes with asparagus over the years..
I have a new recipe for you today. So simple but great if you want your asparagus to be a side dish. Its even a good basic beginning if you are using asparagus in any other recipe like our recipe for Rice Salad, an omelette, pasta, etc. For that reason, I am listing the garlic, lemon juice and Parmesan cheese as optional ingredients as they may not go with your final dish.
Roasted Asparagus Recipe
Ingredients:
- 1 lb. asparagus
- 1 – 2 tablespoons olive oil
- salt & pepper to taste
- 1 garlic clove, chopped – optional
- few squeezes of fresh lemon- optional
- Parmesan cheese – optional
Directions:
1. Preheat oven to 400. Clean asparagus and cut off tough ends.
2. Place asparagus in pie plate or baking dish. Drizzle with oil. Sprinkle with salt and pepper. Add in chopped garlic. Toss asparagus until well coated. Add more olive oil if necessary.
2. Bake for approximately 20 mins. until you reach desired tenderness. Remove from oven, sprinkle with lemon juice and/or Parmesan if using.
