Simple Cajun Catfish Recipe
This is an easy recipe to make. You can cook the catfish, by baking it, which is how I make it, or you can fry the fish. If you drizzle oil in your baking dish and on the fish, you won’t miss the fact that it is not fried. But if your preference is to fry, I am giving you those directions also.
You can spice this recipe by adding more pepper, or keep it on the milder side. Its your call!
Simple Cajun Catfish
Ingredients:
- 1 cup yellow cornmeal
- 1 3/4 cups flour
- 1/2 cup chopped parsley
- salt and cayenne pepper to taste
- 2 pounds of catfish fillets
- oil
- lemon or lime for garnish
Directions:
1. Combine cornmeal, flour, parsley, salt and cayenne pepper. Dip and coat catfish into the cornmeal mixture.
2. Baking Method – drizzle oil in baking dish large enough to place fish in a single layer. Place fish in dish, drizzle with oil. Let bake at 375 for approximately 20 mins until fish is done and golden.
3. Frying Method – Fry in hot oil until golden brown. Drain on paper towels.
4. Serve fish and squeeze with fresh lemon or lime juice.
