Tortellini Recipes
I have seen a few different Tortellini soup recipes lately so I decided to post my own. 🙂 I can’t say that mine is any better than all the others since I’ve only tried my recipe 😉 But it makes a hardy soup which can really be a meal in itself.
This soup starts on the stove by browning sausage and then everything goes into the crock pot. The tortellini and mushrooms go in last. You can serve this soup with a side salad and some nice crusty Italian bread.

- 1 lb. Italian sausage pork or chicken
- 2 cups chopped onions
- 4 cloves garlic minced
- 2 carrots sliced thin or chopped
- 14 - 15 oz. can diced tomatoes or fresh
- 1 teaspoon dried basil or oregano
- 8 cups chicken broth
- 4 tablespoons cornstarch
- 1/2 cup milk
- 1 lb tortellini any filling works
- 8 oz. mushrooms - sliced

Brown and crumble sausage in large skillet. Once browned, remove from pan, discard fat except for a little to brown onions and garlic. Saute onions and garlic until slightly browned.

Add sausage, onion and garlic mixture, carrots, tomatoes, spices and broth to crock pot. Cook on HIGH for 4 hours.

Dissolve cornstarch in milk stir into soup, blend well. Add tortellini and mushrooms. Cook on HIGH for 1 additional hour or until tortellini is cooked. Top with grated cheese, if desired.
