Chilled Melon Soup Recipe
A few summers back, I had a delicious cold soup at a restaurant. Just thinking about it, makes me hungry. I was surprised at how much I liked it because I was a little leery of trying it but it made a big hit with me. It was a cold melon soup. It was so refreshing, tasty and light. You wouldn’t want it in the dead of winter but it is perfect for this time of year.
This soup simple to make, pretty much everything is pureed in a blender or food processor. I make it in the blender because I think it comes out smoother there. The recipe calls for cantaloupe but honeydew is also delicious in this recipe. Once the soup is pureed and chilled, you can serve it with an optional garish of lemon peel and prosciutto!

Chilled Melon Soup
Ingredients:
- 6 – 8 cups cubed ripe cantaloupe – (1 – 2 melons depending on their size)
- 2 tablespoons lemon or lime juice
- 2 tablespoons honey – optional
- 1 cup vanilla yogurt or vanilla almond or soy milk
- 2 teaspoons finely shredded lemon peel
- 1/8 lb. prosciutto – optional
Directions:
1. In blender or food processor combine (in batches) melon, lemon or lime juice, honey and yogurt or milk until smooth.
2. Cover and chill for at least three hours. Serve in bowls topped with a sprinkle of lemon peel and optional prosciutto.
makes 6 – 8 servings
