This is a simple and tasty little recipe. You can put it on a bagel, pita or bread, spread it on celery, use it for a dip with crackers or veggies. Its nice for lunch or as an appetizer. This spread serves many purposes! Its full of vegetables and the red pepper gives it a nice color. You could use green pepper instead, if that is your preference. And if you want to spice it up, add a jalapeño!!
A food processor makes this recipe a breeze. Its important to let your prepared veggies drain before you add them to the cream cheese, otherwise your spread will be runny.
Veggie Spread Recipe
Ingredients:
1/4 cup finely chopped celery
2 – 4 tablespoons finely chopped onion
3/4 cup grated carrot
1/4 cup finely chopped red pepper
1/4 cup grated unpeeled cucumber
1 small garlic clove, minced
8 oz. package cream cheese
1 tablespoon lemon juice
1/4 teaspoon pepper
Directions:
1. Drain vegetables well. Beat cream cheese with lemon juice until smooth stir in vegetables and pepper.
