Roasted Bell Peppers Recipe
I will not lie, these roasted peppers are delicious. They are so good that there was one time that my dog stole some of the peppers I was preparing. I didn’t see her take it, but I noticed the dog and some of the peppers I was peeling disappeared! I found the dog under the bed, the peppers were gone. I learned to keep my unattended roasted peppers on a higher countertop. 😉
Anyway, I buy roasted peppers at the store but they are just not as good as homemade and making them yourself really isn’t difficult. The recipe I am sharing is the way my mom always made them. We always used red bell peppers but in the past few years, I have been adding some yellow and orange ones into the mix. I don’t think green peppers work as well. You roast the peppers in the oven at a high heat, let them cool down, peel them, add some garlic, lemon juice and olive oil. Simple!
The roasted peppers are terrific as an appetizer or great on a sandwich. Have them with some crusty bread and cheese. They would be nice served with our Lemony Artichoke, Olive Salad, Baba Ganoush and Homemade Hummus recipes. I could live on those foods.
You can also make a pasta sauce by pureeing the prepared peppers with some cream. 💡

Roasted Bell Peppers Recipe
Ingredients:
- 4 red, yellow or orange bell peppers
- 2 garlic cloves, chopped – add more or less, depending on taste
- 2 tablespoons lemon juice
- 4 tablespoons olive oil
Directions:
1. Preheat oven to 450. Wash peppers and place on baking sheet. Roast the peppers until skin has blackened and blistered – about 30 mins. Turn peppers a few times while roasting.
2. Remove peppers from oven. Place in large bowl, cover or place in a paper bag. Let sit for about 20 mins. Once the peppers are cool enough to handle, remove stems, seeds and peel skin. Cut into strips.
3. Place peppers in bowl or jar. Add in remaining ingredients. Stir well and refrigerate overnight.
