Pasta with Garlic Sauce Recipe

Okay, I know this is a little premature, but Happy National Garlic Day!!  That’s right, April 19th is National Garlic Day.  🙂  Its funny, but growing up in an Italian household, garlic was a mainstay.  Now that I am living in the midwest, the simple dishes and meals that I took for the norm are most certainly rare around here.  But I am sure anyone from the midwest or south who travel to the east or west coast might wonder where all the biscuits and gravy and grits are!  Its all what you are used to.  So the recipe I am sharing today Pasta with Garlic Sauce, or Salsa di Aglio as my grandma would say, may be something you have often or it might be bizarre.  Either way, I hope you give it a try.

This recipe can be used as is, or it can be the base for many different dishes.  Add vegetables and you have a delicious pasta primavera, add shrimp and its shrimp scampi.  Add clam broth and clams and you have linguine with clam sauce.  Add spinach and saute then serve with crusty Italian bread.  All of these are delicious but the basic recipe is also a huge hit.  Toss it with pasta and top with grated cheese.. done!  🙂

I’d also like to mention the benefits of garlic.  It is so healthy, good for your heart, known to lower cholesterol and excellent for your overall well being.  Yes, it can cause some pungent breath…  😳

Depending on your garlic “meter” and how much garlic you can handle, you’ll have to adjust the number of cloves you add to this recipe.  I have a few friends who are just as much into garlic as I am and we probably tend to go overboard but its all good.

 

Pasta with Garlic Sauce Recipe

Ingredients:

  • 1/3 – 1/2 cup olive oil
  • 4 garlic cloves, minced – add more or less, depending on taste
  • 1 lb. pasta, cooked separately
  • salt  & paper to taste
  • Parmesan or Romano cheese, to taste
  • Parsley for garnish, optional

 

Directions:

Heat oil and lightly brown garlic until slightly golden brown, about 2 mins.  Toss with cooked pasta.  Season with salt and pepper.  Top with parsley and serve with grated cheese.
