5 Meals for Under $30 at Target
What’s for dinner this week? How many times a week do you ask yourself that question! Check out our menu and recipes for this week. We are basing our menu on the great deals that you can pick up this week at Target. Everything can be purchased at Target and your cost will be less than $30! Our recipes are geared for a family of four, unless otherwise noted. That’s and average of $6 per meal or $1.50 per serving. How awesome is that!
You might find that you already have some of the items listed on the shopping list in your stock pile so your out of pocket cost will be even less! Just so you know, some prices may vary at your local Target.

Baked Tilapia with Tomatoes
with Roasted Red Potatoes and Frozen Vegetables
Total Cost: approximately $5.79
Ingredients you will need for this recipe:
- Tilapia filets 1 lb
- Diced tomatoes – 15 oz. can
- Garlic – 2 cloves
- Olive oil 2 tablespoons
- Dried oregano 1/2 teaspoon
- Lemon juice – 1/2 tablespoon
- Parsley for garnish (optional)

Turkey Fried Rice
with Kale
Total Cost: approximately $5.89
Ingredients you will need for this recipe:
- Brown rice – 2 cups
- Eggs – 2
- Ground turkey – 1/2 lb.
- Green onions or scallions – 1/2 cup sliced
- Garlic – 2 cloves
- Frozen mixed vegetables – 2 cups
- Soy sauce – 1/4 cup
- Sesame or vegetable oil – 2 teaspoons
- Ground red pepper (cayenne) – 1/4 teaspoon
The original recipe calls for Minute Rice, but we substituted regular brown rice for our shopping list.
Here’s your shopping list:
Spaghetti with Zesty Tomato Sauce, Tuna & Black Olives
with Tossed Salad
Total Cost: approximately $5.35
Ingredients you will need for this recipe:
- Spaghetti – 1 box
- Marinara Sauce
- Olive oil – 3 tablespoons
- Onion – 1/2 large
- Red pepper flakes – 1/8 teaspoon
- Garlic – 2 cloves
- Capers – 2 teaspoons
- Pitted black olives – 1 cup – about 2/3 of a 6 oz. can
- Tuna – 1 can

Chicken & Rice Bake
with Spinach and Baby Carrots
Total Cost: approximately $5.23
Ingredients you will need for this recipe:
- Cream of Mushroom Soup
- White rice – 3/4 cup uncooked
- Paprika – 1/4 teaspoon
- Boneless chicken breast – 1 lb
Here’s your shopping list:
Black Bean and Corn Quesadillas
Total Cost: approximately $5.36
Ingredients you will need for this recipe:
- Flour tortillas – 4 (8-inch)
- Cheese – 2 cups shredded
- Black beans – 1 can
- Frozen corn kernels – 1 cup
- Green onions – 1/4 cup
- Salsa and Sour cream to taste
We added Cracker Barrel cheese to our list. You can shred that for this recipe. With the 25% off Cartwheel and coupon, its a lot less expensive than buying the shredded cheese.
