If you have an ice cream maker at your house, I have a great Coconut Milk Ice Cream recipe.  We make this at least once a week and it’s so yummy.

Here is the recipe:

Ingredients:

• 2 cups Coconut Milk
• 3 frozen Bananas or 1/2 cup Coconut Palm Sugar
• 1 tsp Vanilla Extract
• 1/2 cup Pistachios chopped (you could use almonds as well)

Directions:

1. Add coconut milk, bananas or palm sugar, and vanilla extract to blender and blend until smooth
2. Add liquid mixture to your ice cream maker and let mix for about 20 – 30 minutes (or until ice cream is formed)
3. Gently stir in pistachios (too much stirring will make the ice cream less creamy)
4. Serve immediately
