Mini Crustless Quiche Recipe

Ingredients:

• 1 (10-oz) package frozen spinach, thawed, drained
• A couple of pieces of Turkey Bacon, crumbled
• 1/2 cup shredded mozzarella cheese
• 1/3 cup finely shredded onion
• 4 Large Eggs
• 2 Cups Light Cream
• 1/4 teaspoon salt
• 1/4 teaspoon pepper

Directions:

Step 1: Spray standard size 12-muffin tins pan with a cooking spray. Preheat oven to 425 degrees
Step 2: Layer each muffin tin with spinach, bacon bits, onion and cheese
Step 3: Whisk eggs, cream, salt, and pepper together. Pour egg mixture onto each muffin opening
Step 4:  Bake in the oven at 425 degrees for 15 minutes Reduce temp to 350, and bake for another 15 minutes
Step 5: Let stand for 10 minutes before removing from pan to make sure that the eggs have set

Makes: 12-muffin sizes quiches
