Budget Recipe: Creamless Creamy Tomato Soup

Ingredients:

2 Tablespoons extra virgin olive oil
1 medium onion (chopped)
3 cloves of garlic (minced)
4 cans (14oz each) of whole peeled tomatoes
1 Tablespoon brown sugar
3 large slices of good quality white sandwich bread (torn into pieces,
crust removed)
2 cups chicken broth (14oz can)
salt and ground black pepper

Directions:
 

1. In a large stock pot heat the olive oil on medium to medium high heat.
2. Add onion and garlic and cook until onion is translucent, about 3 to 5 mins. 
3. Stir in tomatoes (with their juice). Puree with an immersion blender. 
4. Stir in the brown sugar until dissolved. Add the bread. 
5. Bring the soup to a boil. 
6. Reduce the heat to medium and cook until bread
7. becomes saturated and starts to break down, about 5 mins. 
8. Stir occasionally. 
9. Puree the soup again with an immersion blender until smooth. 
10. And chicken broth and season with salt and pepper.
