Each week I will be picking a coupon and deal of the week and working up a recipe around it. This week I have used the following inexpensive ingredients
ShopRite: Hatfield Ham Steaks
Plus the mozzarella cheese and the sauce for dipping have all been free or close to it recently.
You can check out all the ShopRite Deals this week.
And, here is your Living Rich Recipe of the week :

Ham & Cheese Calzone Recipe
Ingredients
Pizza Dough (frozen, fresh, or homemade)
3/4 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 lb (one package) Hatfield ham steak, cut in small pieces
2 eggs
sea salt
1/4 cup grated pecorino cheese
extra virgin olive oil
marinara sauce
Instructions
Prepare pizza dough (I used our bread maker to make the dough)
Preheat oven to 400 degrees F.
Cut dough into 2 pieces
In a medium mixing bowl combine the ricotta, ham, mozzarella, 1 egg and pecorino cheese. Stir until well combined and set aside.
Use a rolling pin to roll the dough out into pizza sized circles
if you are using a pizza stone, sprinkle some sea salt on to keep the dough from sticking. If not spray some pam on the baking sheet
Lay the dough on the pizza stone and spoon half of the cheese and ham mixture onto half of the dough.
Using your finger, put olive oil on the edges of the dough.
Fold the dough over the cheese mixture creating a half moon shape.
Use your fingers to crimp the edges to seal the calzone
in a small bowl beat the last egg and use a pastry brush to spread it on top of the calzones. This creates a golden brown crust.
Place in the oven and cook for about 25 mins. Make sure the center is not doughy, this will mostly depend on how thick your crust is.
Slice it up and enjoy it hot with some marinara sauce on the side!
