Raspberry Chicken Salad Recipe
If you are looking for a cool, summertime salad for dinner, this may be it. I barely feel like cooking in the summer heat, let alone even eating. This recipe nice and light. It has chicken, raspberries, nuts on a bed of greens with a homemade dressing. The dressing is very simple to make in a blender or you could substitute a raspberry vinaigrette if you prefer. You could also add in some other berries such as blackberries or blueberries.

Raspberry Chicken Salad
Ingredients:
- 6 – 8 cups mixed salad greens
- 2 cups cut-up cooked chicken breast
- 1 cup fresh raspberries
- 1/3 cup thinly sliced celery
- 1/3 cup chopped nuts (walnuts or pecans)
Raspberry dressing
- 1 cup plain yogurt (fat free works)
- 1/2 cup fresh raspberries
- 1 tablespoon raspberry or red wine vinegar
- 2 teaspoons sugar or honey
Directions:
1. Prepare raspberry dressing by putting all ingredients in blender and blend until smooth.
2. Toss salad greens, chicken, berries, celery and nuts. Serve with dressing.
