Pasta with Asparagus
Yay for Spring! I’ve been ready for it since November 😉 How about you? A few days ago, we posted the Top Items to Buy In April and that motivated me to post today’s recipe.
This recipe has a delicate, delicious taste. If you happen to have any leftover ham, you can also add that to this recipe, but it is not necessary.
This recipe is simple to make and is sure to please any asparagus lover! Basically you cook the asparagus and then add them to a cream sauce. Pour it over your favorite pasta and there you have it.
Also here are a few other LRWC recipes that call for asparagus:
Pasta with Asparagus Recipe
Ingredients:
- 1 lb. pasta
- 1 lb. asparagus
- salt & pepper to taste
- 1/4 cup butter or olive oil
- 2 garlic cloves – chopped
- 1 cup heavy cream or half & half
- 1/2 cup grated fontina, provolone or mozzarella cheese
- grated cheese for topping
Directions:
1. Cook pasta as directed.
2. Wash asparagus and remove any tough stalks. Cut into approximately 1 inch pieces. Place in large shallow pan with salted water. Bring to boil and let cook for 5-8 minutes if the asparagus is thick, less if they are thin. Drain and remove asparagus from pan.
3. In the same pan, add butter or oil. Add chopped garlic, cook until softened but not brown. Add in cream, pepper and asparagus; let cook 3 mins. Add in grated cheese and stir until it has melted. Turn into a hot dish and serve immediately. Top with additional cheese.
Enjoy!!
