Crustless Spinach Quiche
Happy 2016 everyone! The holidays are now over… Speaking for myself, I munched on a lot of cookies, goodies and holiday treats over the past few weeks and its time for me to get back on track with better eating habits. Today I am sharing a recipe for a low-carb quiche. If you’re counting your carbs, each serving has 9 grams of carbs and 2 grams of fiber but you don’t have to be on a low-carb diet to enjoy this recipe. This quiche is yummy for dinner or lunch. Serve it with a salad and rolls for the carb lovers 🙂
The recipe calls for chorizo sausage which can be spicy; you can substitute regular pork sausage, turkey or chicken sausage. If you want to give this recipe a little more pizzazz, serve it with homemade salsa, the recipe for the salsa follows.
Crustless Spinach Quiche
Ingredients:
- 8 oz. chorizo or sausage
- 8 eggs
- 10 oz. package frozen chopped spinach, thawed and squeezed dry
- 1 cup crumbled queso fresco or shredded cheddar or pepper jack cheese
- 1/2 cup whipping cream or half & half
- 1 tomato, sliced thin
- fresh salsa – optional – see recipe below
Directions:
1. Preheat oven to 450°. Grease 10 inch quiche dish or deep dish pie plate.
2. Remove sausage from casing. Crumble and cook in skillet until brown. Remove from heat, pour off drippings and let cool for five minutes.
3. Beat eggs in medium bowl. Add spinach, cheese, cream and sausage mix well. Pour into prepared quiche dish. Place sliced tomato on top.
4. Bake 20 minutes or until center is set. Let stand five minutes before cutting into wedges. Serve with salsa, if desired.
makes 4 servings
Fresh Salsa
Ingredients:
- 3 plum tomatoes, seeded and chopped
- 2 tablespoons chopped onion
- 1 small jalapeno pepper, seeded and minced (use more or less depending on how hot you like your salsa)
- 1 tablespoon chopped cilantro or parsley
- 1 tablespoon fresh lime juice
- salt & pepper to taste
Directions:
Mix all ingredients together. Refrigerate until ready to serve with quiche.
