Living Rich Recipe: Fettuccine with Roasted Vegetables & Sausage

Ingredients
    •    1 can diced tomatoes
    •    1 pkg Johnsonville Italian Sausage Links
    •    1 medium zucchini
    •    1 medium onion
    •    1 red pepper
    •    1 1/2 tsp minced garlic
    •    1 Tbsp olive oil
    •    1 box fettucine
    •    3/4 cup crumbled feta cheese with herbs

 Directions
    1.    Preheat oven to 450 degrees.
    2.    Cook sausages according to package instructions (takes about 15 mins on the stove top)
    3.    Cut into small pieces, zucchini, onion, and pepper.
    4.    In a large bowl mix together zucchini, onion, pepper, tomatoes, garlic and olive oil.
    5.    Place in a large baking dish.
    6.    Bake veggies uncovered for about 20 mins.
    7.    Boil water for fettucine and cook according to package instructions
    8.    Cut sausage into coin slices and mix with veggies
    9.    Bake another 5-8 mins.
    10.    Once the fettucine and veggies are finished mix together and pour in the feta cheese.
    11.    Enjoy hot!
