Lemony Chicken Recipe – Super Healthy, Super Inexpensive

Here is a recipe I had the other night.  It was delicious, super, super easy, super inexpensive and such a great meal for my diet. 

Lemony Chicken

4 Boneless, Skinless Chicken Breast (thin sliced or pounded thin)
2 Lemons
4 Tbsp Olive Oil
Salt and Pepper

Heat a griddle (we used an electric skillet) to medium high.
Put chicken in a baking pan and season with olive oil and salt.  Squeeze the juice from the lemon and add the
 pepper. Flip and coat the chicken in the marinade. Cook chicken for 3 minutes each side or until done.

We served it with brown rice (I had 1/2 cup) and salad (I had just balsamic vinegar).  It was delicious and the whole meal (served 4) was under $5.00.
